Vegetarian Meatloaf

This is a delicious meatloaf that will become a family favorite:
Ingredients
- 1/2 cup butter or margarine
- 1/2 to 1 cup chopped onion
- 4 minced garlic cloves
- 1 (12 oz) frozen bag Morning Star Farms Meal Starters Veggie Crumbles
- 3 cups dry herb seasoned stuffing mix or 3 to 4 cubed bread slices
- 1 cup egg substitute or 4 large eggs
- 1 cup shredded cheddar cheese
- 1 teaspoon salt free seasoning such as Salt Free Mc Cormick Perfect Pinch, Original
Instructions
- Heat oven to 350 degrees.
- Spray bread pan with non stick cooking spray and add 2 to 3 tablespoons of BBQ sauce to the bottom of the pan or add 2 to 3 tablespoons of ketchup and sprinkle a couple tablespoons of brown sugar.
- In a large skillet, melt butter and saute onions and garlic until tender. Add veggie crumbles and cook until well blended. Add dry stuffing and continue to cook until all ingredients are well blended and moist. Add eggs, cheese, salt free seasoning and stir until all the ingredients are well incorporated.
- Quickly pour mixture into prepared bread pan and bake for about 30 to 40 minutes or until top is lightly browned.
