Servings: 8 servings (1 cup each)
3 cups water
1-1/2 cups quinoa, uncooked
1 (15 oz.) canned black beans, rinsed
1 red bell pepper, diced
2 roma tomatoes, diced
¼ cup cilantro, chopped
1 tablespoon fresh lime juice
2 tablesppons extra virgin olive oil
½ teaspoon salt
1 ripe avocado, cubed
Preparation
- In a large saucepan, boil the water and cook the quinoa at medium heat for about 10 to 12 minutes or until most water is absorbed. Cover and remove from heat. Let rest for ~15 minutes or until cool.
- In a large bowl mix all the infredients, excpet the avocado. Fold in the avocado right before serving.
Note: Add your favorite cooked meat and make it a complete meal.
