I want to share a super simple and very decorative recipe you can use to make your Halloween more festive (and more nutritious!). Thank you Campbell’s* for sharing this Fall-Recipe (*not a sponsor of this blog). This pumpkin soup recipe makes perfect center piece for a family dinner or a spooky house party.
This is also a great recipe to get your kids involved with, allowing them to add special touches in decorating the pumpkin that will act as a soup bowl.
What you need:
- Mini pumpkins
- YES! Campbell’s Soup or your favorite fall soup
- Toppings: Fresh herbs, roasted pumpkin seeds – optional
Make the pumpkin bowls: Preheat the oven to 400 degrees F. Cut and remove the lid, scooping out all pumpkin, seeds, and fibers. Lightly coat the inside with about 1/4-1/2 teaspoon both salt and sugar. Cook both parts of the pumpkin (lid and base) using a baking sheet; for about 20 minutes or more. Pour the soup into the pumpkins, garnish with your favorite toppings and serve inmediately.
