In honor of national nutrition month I will be sharing with you nutrition tips and recipes to help you build healthy habits for life. Enjoy this delicious and nutritious recipe, which incorporates some of my favorite ingredients: mango, jicama, and orange & lime juice. Enjoy!
Jicama Mango Salad
Serves: 7 servings – 1/2 cup each (about 6oz each serving)
1 garlic clove, minced
½ cup fresh orange juice
¼ cup fresh lemon juice
½ cup cilantro, chopped
2 tablespoons olive oil
Salt and pepper to taste
2 cups Jicama, peeled, cut julienne
3 cups mangos, peeled, sliced
1 Jalapeno, seeded, diced
1 cup red onion, peeled, minced
Preparation
1 Mix garlic, orange and lemon juice, cilantro, and olive oil. Season with salt and pepper.
2 Add remaining ingredients, toss lightly and serve. Garnish with sliced radishes, if desired.
