To say that I have fallen in love with sorghum is an understatement! This grain has it all – beauty, nutrition, and flavor. Keep reading to learn about sorghum’s health benefits and some deliciously easy recipes.

Sorghum recipe versatility goes beyond loaves of bread – sorghum’s unique texture is versatile. Use sorghum in cereals, granola, cracker, bars. flakes, puffs, etc. As well as pairing it with proteins such as beans/pulses and pork to create #powerfulPairings
Here are some of the recipes I prepared last week:
Popped Sorghum Granola Trail Mix
2 cups Nu Life Market Popped Sorghum
2 cups old quick oats
½ cup shredded unsweetened coconut
½ cup mini semisweet chocolate pieces
½ cup dried cranberries, finely chopped
¼ cup Nu Life Market Sorghum All-Purpose Flour
¼ teaspoon salt
½ cup canola oil
½ cup honey
1 teaspoon vanilla extract
Directions
- Preheat oven to 325°F. Line a 13x9x2-inch baking pan with parchment paper; set aside.
- In a large bowl, combine the first 7 ingredients.
- In a small bowl, whisk together the remaining ingredients.
- Pour the wet ingredients over the popped sorghum/oat mixture and stir to combine well. Press mixture into prepared baking pan.
- Bake for 20 to 25 minutes or until golden brown.
- Allow to cool completely then cut into sixteen 4 1/2x 1 1/2 -inch bars or crumble.
Makes: About 4 cups
Artisan Cheese Crackers
2 tablespoons unsalted butter, soft
¾ cup cheddar cheese, shredded
¼cup Parmesan cheese, grated
½cup Nu Life Market Sorghum All-Purpose Flour
½teaspoon paprika
¼ teaspoon salt
Pinch Cayenne pepper
2 tablespoons cold water
Directions
- Preheat oven to 375°F. Line a large baking pan with parchment paper; set aside.
- In a large bowl, combine the first 7 ingredients. Break lumps with a fork.
- Add water, and mix with a spatula while forming a dough with your hands. Press dough into a disk and refrigerate for at least 1 hour.
- Transfer disk to a floured flat surface. Using a small cookie cutter, shape the dough as desired. You may also cut into small squares or rectangles
- Bake for 10 to 12 minutes or until golden brown.
Makes: About 35 mini crackers
Easy Sorghum Lasagna
1 lb. ground Italian sausage or alternative, cooked
2 cups Nu-Life Market Pearled Sorghum Grain, cooked
2tablespoons olive oil
1 teaspoon Italian seasoning
¼ teaspoon salt and pepper to taste
2 cups marinara sauce
8 oz low-fat ricotta cheese
1 cup mozzarella cheese, shredded
¼ cup Parmesan cheese, grated
Fresh chopped oregano and/or basil to taste for garnish
Directions
- Preheat oven to 375°F. Grease a large (9”x13”) casserole baking pan; set aside.
- In a large bowl, combine sorghum, oil, Italian seasoning, and salt/pepper.
- Pour half of the marinara sauce into the casserole dish bottom. Layer with the cooked sausage, followed by dollops of ricotta cheese and top with sorghum mixture, remaining marinara sauce, and mozzarella cheese. Sprinkle Parmesan cheese.
- Bake for 25 to 30 minutes or until cheese is melted and golden brown. Garnish with chopped oregano or basil.
