Beans rule in our Hispanic homes. Beans are a staple at every meal, and breakfast is no exception. The trick is to find a delicious breakfast recipe that is appealing, delicious and by the way nutrient dense. This recipe was inspired by the Mexican flavor combinations I learned while living in Mexico City. The nutrient dense burrito recipe can be assembled in minutes and you be proud of all the inmune boosting nutrients such as protein, fiber, and many important vitamins and minerals you will be providing at breakfast to kick off the day to a good start. Here is my easy colorful and nutrient dense recipe I want to share with you. Enjoy!
Bean eggs and avocado Burrito
A delicious and full of nutrients burrito your kids will be asking for every day
1 (15 oz.) can black beans, drained and rinsed
½ to 3/4 cup Mexican salsa
8 large eggs, beaten (can sub for 1 cup egg whites)
8 whole grain tortillas, medium
2 medium avocados, thinly sliced
1 medium tomato
1 cup Chihuahua cheese or Monterey Jack cheese, shredded
Preparation:
- In a blender or with a masher, puree beans with salsa. Set aside
- In a medium skillet, spray with non stick cooking oil and cook eggs over medium heat until moist and fluffy, for about 1 to 2 minutes. Set aside.
- To assemble burrito, use the following toppings. For each tortilla, spread bean puree over the four tortillas, divide eggs and cheese among the four tortillas. Top with 2 or three tomatoes and avocado slices. Sprinkle a pinch of seasoning herbs. Wrap and serve with fruit slices for breakfast or brunch.
Serves: 4 medium burritos
